Ingredients

  • Chia seeds - 2 tablespoons
  • Water - 6 tablespoons
  • Cooked lentils - 1 cup
  • Cooked quinoa - 1/2 cup
  • Red onion - 1/4 cup, finely chopped
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 1/4 cup
  • Olive oil - 2 tablespoons (for cooking)
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. In a small bowl, combine chia seeds and water. Let it sit for about 10 minutes until it forms a gel-like consistency.
  2. In a large mixing bowl, combine cooked lentils, cooked quinoa, chopped red onion, minced garlic, smoked paprika, cumin, salt, and black pepper. Mix well.
  3. Add the chia gel to the lentil mixture and stir until fully incorporated.
  4. Gradually add chickpea flour to the mixture until it binds together and can be shaped into patties.
  5. Form the mixture into 2 equally sized burger patties.
  6. Heat olive oil in a non-stick skillet over medium heat. Cook each patty for about 5-7 minutes on each side, or until golden brown.
  7. While the patties are cooking, toast the whole grain burger buns in the same skillet until lightly crispy.
  8. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the patty, sliced tomato, avocado, and a dollop of vegan mayonnaise. Top with the other half of the bun.
