- Chia seeds - 2 tablespoons
- Water - 6 tablespoons
- Cooked lentils - 1 cup
- Cooked quinoa - 1/2 cup
- Red onion - 1/4 cup, finely chopped
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 1/4 cup
- Olive oil - 2 tablespoons (for cooking)
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- In a small bowl, combine chia seeds and water. Let it sit for about 10 minutes until it forms a gel-like consistency.
- In a large mixing bowl, combine cooked lentils, cooked quinoa, chopped red onion, minced garlic, smoked paprika, cumin, salt, and black pepper. Mix well.
- Add the chia gel to the lentil mixture and stir until fully incorporated.
- Gradually add chickpea flour to the mixture until it binds together and can be shaped into patties.
- Form the mixture into 2 equally sized burger patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook each patty for about 5-7 minutes on each side, or until golden brown.
- While the patties are cooking, toast the whole grain burger buns in the same skillet until lightly crispy.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the patty, sliced tomato, avocado, and a dollop of vegan mayonnaise. Top with the other half of the bun.
