- Red bell pepper - 1 (diced)
- Fresh parsley - 2 tablespoons (chopped)

- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Breadcrumbs - 50 grams
- Egg - 1 (beaten)
- Burger buns - 2
- Cheese (optional) - 2 slices
- Baby spinach - a handful
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat and add the sliced red onion. Cook slowly, stirring occasionally, until the onions are caramelized (about 10-15 minutes).
- Add minced garlic and diced red bell pepper to the skillet, cooking for an additional 5 minutes until softened. Remove from heat and set aside.
- In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth.
- Stir in the caramelized onion mixture, parsley, cumin, paprika, salt, black pepper, breadcrumbs, and beaten egg until well combined.
- Form the mixture into 2 patties.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- While the patties are cooking, toast the burger buns until lightly golden.
- Assemble the burgers by placing a patty on each bun, adding a slice of cheese (if using), and topping with baby spinach. Serve immediately.
