Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 100g, cooked
  • Breadcrumbs - 50g
  • Fresh parsley - 2 tablespoons, chopped
  • Whole grain burger buns - 2
  • Avocado - 1/2, sliced
  • Tomato - 1, sliced
  • Leafy greens (e.g., spinach or arugula) - 1 cup

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Slice the eggplant into 1.5 cm thick rounds and place them on a baking sheet.
  3. Brush both sides of the eggplant slices with olive oil and sprinkle with salt, black pepper, cumin, and paprika.
  4. Roast the eggplant in the preheated oven for 20 minutes, flipping halfway through, until golden and tender.
  5. In a bowl, mash the cooked chickpeas with a fork until coarsely mashed.
  6. Add the roasted eggplant, minced garlic, breadcrumbs, and chopped parsley to the chickpeas and mix until well combined.
  7. Form the mixture into two patties.
  8. Heat a non-stick skillet over medium heat and add a little olive oil.
  9. Cook the patties for about 5 minutes on each side until they are golden brown and heated through.
  10. Toast the burger buns lightly in the skillet for 1-2 minutes.
  11. Assemble the burgers by placing the patty on the bottom half of the bun, and topping it with avocado slices, tomato slices, and leafy greens. Finish with the top half of the bun.
