- Almond meal - 150g
- Cooked chickpeas - 100g
- Red bell pepper - 1, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cumin powder - 1 tsp
- Paprika - 1 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Olive oil - 2 tbsp (for cooking)
- Egg - 1, beaten
- Fresh parsley - 2 tbsp, chopped
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Garlic aioli - 4 tbsp
Steps
- In a large mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add the almond meal, chopped red bell pepper, minced garlic, chopped onion, cumin powder, paprika, salt, black pepper, and chopped parsley to the bowl.
- Mix in the beaten egg until the mixture is well combined and holds together. If too dry, add a little water; if too wet, add a bit more almond meal.
- Divide the mixture into two equal portions and shape them into patties.
- Heat the olive oil in a frying pan over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and cooked through.
- Toast the burger buns lightly on a separate pan or in a toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the almond patty, a slice of tomato, and a generous dollop of garlic aioli. Top it with the other half of the bun.
- Serve immediately with your choice of side.
