Ingredients

  • Almond meal - 150g
  • Cooked chickpeas - 100g
  • Red bell pepper - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin powder - 1 tsp
  • Paprika - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - 2 tbsp (for cooking)
  • Egg - 1, beaten
  • Fresh parsley - 2 tbsp, chopped
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Garlic aioli - 4 tbsp

Steps

  1. In a large mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the almond meal, chopped red bell pepper, minced garlic, chopped onion, cumin powder, paprika, salt, black pepper, and chopped parsley to the bowl.
  3. Mix in the beaten egg until the mixture is well combined and holds together. If too dry, add a little water; if too wet, add a bit more almond meal.
  4. Divide the mixture into two equal portions and shape them into patties.
  5. Heat the olive oil in a frying pan over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and cooked through.
  6. Toast the burger buns lightly on a separate pan or in a toaster.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the almond patty, a slice of tomato, and a generous dollop of garlic aioli. Top it with the other half of the bun.
  8. Serve immediately with your choice of side.
