- All-purpose flour - 100 grams
- Cornstarch - 30 grams
- Baking powder - 1 teaspoon
- Sugar - 30 grams
- Almond milk - 200 ml
- Vanilla extract - 1 teaspoon
- Lemon zest - 1 teaspoon
- Pinch of salt
- Oil for frying - as needed
- Powdered sugar - for dusting
Steps
- In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, sugar, and salt.
- In a separate bowl, whisk together the almond milk, vanilla extract, and lemon zest.
- Gradually pour the wet ingredients into the dry ingredients, mixing until you achieve a smooth batter.
- Heat oil in a deep frying pan over medium heat until hot (about 180°C or 350°F).
- Using a spoon, carefully drop small amounts of the batter into the hot oil, frying a few at a time to avoid overcrowding.
- Fry the buñuelos for about 2-3 minutes on each side or until they are golden brown and puffed up.
- Remove the buñuelos from the oil and place them on paper towels to drain excess oil.
- Dust with powdered sugar before serving.
