- Pork tenderloin - 300 grams
- Red bell pepper - 1 medium, cut into 2cm pieces
- Yellow bell pepper - 1 medium, cut into 2cm pieces
- Red onion - 1 medium, cut into wedges
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Skewers - 4 wooden or metal
Steps
- In a bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, black pepper, and lemon juice to create a marinade.
- Cut the pork tenderloin into 2cm cubes and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
- While the pork marinates, soak wooden skewers in water for 10 minutes to prevent burning (if using metal skewers, this step is not necessary).
- After marinating, thread the pork cubes, red bell pepper, yellow bell pepper, and red onion onto the skewers, alternating between the ingredients.
- Preheat a grill or grill pan over medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally until the pork is cooked through and has nice char marks.
- Remove from the grill, sprinkle with fresh parsley, and serve immediately.
