- Fresh anchovies - 200 grams
- White wine vinegar - 100 ml
- Olive oil - 50 ml
- Garlic - 2 cloves, thinly sliced
- Salt - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - to taste
Steps
- Clean the anchovies by removing the heads, guts, and bones. Rinse them under cold water and pat dry with paper towels.
- In a shallow dish, combine the white wine vinegar and salt. Place the anchovies in the dish, making sure they are fully submerged in the vinegar. Cover and refrigerate for at least 24 hours.
- After marinating, remove the anchovies from the vinegar and gently rinse them under cold water to remove excess salt.
- In a separate bowl, mix the olive oil, sliced garlic, and black pepper. Add the anchovies and gently toss to coat them in the olive oil mixture.
- Transfer the marinated anchovies to a serving plate and garnish with chopped parsley. Serve chilled as a snack or appetizer.
