Ingredients

  • All-purpose flour - 250g
  • Warm water - 150ml
  • Olive oil - 2 tablespoons
  • Active dry yeast - 7g
  • Salt - 1 teaspoon
  • Sugar - 1 teaspoon
  • Vegan chorizo - 100g, crumbled
  • Red bell pepper - 1, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, heat a pan over medium heat and add a splash of olive oil. Sauté the onion and garlic until translucent.
  5. Add the diced red bell pepper and cook for another 2-3 minutes. Stir in the crumbled vegan chorizo, smoked paprika, cumin, and black pepper. Cook for an additional 5 minutes, then remove from heat and stir in chopped parsley.
  6. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle and place a spoonful of the chorizo mixture in the center.
  7. Fold the dough over the filling, pinching the edges to seal. Place the filled buns seam-side down on a baking sheet lined with parchment paper.
  8. Preheat the oven to 200°C (390°F). Let the buns rise for another 10-15 minutes while the oven heats.
  9. Bake the buns for 20-25 minutes until golden brown. Allow to cool slightly before serving.
