Ingredients

  • All-purpose flour - 200 grams
  • Active dry yeast - 5 grams
  • Warm water - 120 milliliters
  • Olive oil - 30 milliliters
  • Green olives, pitted and chopped - 100 grams
  • Black olives, pitted and chopped - 50 grams
  • Salt - 5 grams
  • Sugar - 5 grams
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a small bowl, dissolve the yeast and sugar in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour, salt, oregano, thyme, and black pepper.
  3. Make a well in the center of the dry ingredients and pour in the yeast mixture and olive oil.
  4. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Incorporate the chopped green and black olives into the dough, kneading gently to distribute them evenly.
  6. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  7. Preheat the oven to 200°C (390°F).
  8. Once risen, punch down the dough and divide it into 6 equal pieces, shaping each piece into a round bun.
  9. Place the buns on a baking sheet lined with parchment paper, cover, and let them rise for another 15 minutes.
  10. Bake in the preheated oven for 15-20 minutes or until golden brown on top.
  11. Remove from the oven and let cool slightly before serving.
