- Potatoes - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 small, diced
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 100 grams
- Vegetable broth - 150 ml
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (390°F).
- Peel and chop the potatoes into small cubes, then boil them in salted water for about 10-15 minutes or until tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for another 3-4 minutes until softened.
- Stir in the smoked paprika, salt, and black pepper, mixing well to combine the flavors.
- In a large bowl, mash the boiled potatoes until smooth, then mix in the sautéed vegetables.
- In a separate bowl, whisk together the chickpea flour and vegetable broth until smooth. Pour this mixture into the potato and vegetable mixture, stirring until well combined.
- Grease a baking dish and transfer the potato mixture into it, smoothing the top with a spatula.
- Bake in the preheated oven for 20-25 minutes until the top is golden and slightly crispy.
- Remove from the oven and let it cool for a few minutes before garnishing with chopped fresh parsley. Serve warm.
