Ingredients

  • Potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 small, diced
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 100 grams
  • Vegetable broth - 150 ml
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Peel and chop the potatoes into small cubes, then boil them in salted water for about 10-15 minutes or until tender. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic and diced red bell pepper to the skillet, cooking for another 3-4 minutes until softened.
  5. Stir in the smoked paprika, salt, and black pepper, mixing well to combine the flavors.
  6. In a large bowl, mash the boiled potatoes until smooth, then mix in the sautéed vegetables.
  7. In a separate bowl, whisk together the chickpea flour and vegetable broth until smooth. Pour this mixture into the potato and vegetable mixture, stirring until well combined.
  8. Grease a baking dish and transfer the potato mixture into it, smoothing the top with a spatula.
  9. Bake in the preheated oven for 20-25 minutes until the top is golden and slightly crispy.
  10. Remove from the oven and let it cool for a few minutes before garnishing with chopped fresh parsley. Serve warm.
