  • Active dry yeast - 7 grams
  • Granulated sugar - 50 grams
  • Salt - 5 grams
  • Warm water - 150 ml
  • Olive oil - 50 ml
  • Egg - 1 large (optional for egg wash)
  • Ground cinnamon - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Butter - 50 grams (for filling)
  • Almonds, chopped - 30 grams (for topping)
  • Powdered sugar - for dusting

Steps

  1. In a small bowl, dissolve the active dry yeast and 10 grams of sugar in warm water; let it sit for 10 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour, remaining sugar, salt, cinnamon, and vanilla extract.
  3. Make a well in the center of the flour mixture, and pour in the yeast mixture and olive oil. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  6. Preheat your oven to 180°C (350°F).
  7. Once risen, punch down the dough and divide it into 4 equal pieces. Roll each piece into a circle about 1 cm thick.
  8. Spread a thin layer of butter on each circle, sprinkle with chopped almonds, and fold them over to form half-moons. Seal the edges.
  9. Brush the tops with beaten egg (if using) for a golden finish, and place them on a baking sheet lined with parchment paper.
  10. Bake in the preheated oven for 20-25 minutes or until golden brown.
  11. Allow the pastries to cool slightly before dusting with powdered sugar and serving.
