Steps
- In a small bowl, dissolve the active dry yeast and 10 grams of sugar in warm water; let it sit for 10 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour, remaining sugar, salt, cinnamon, and vanilla extract.
- Make a well in the center of the flour mixture, and pour in the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat your oven to 180°C (350°F).
- Once risen, punch down the dough and divide it into 4 equal pieces. Roll each piece into a circle about 1 cm thick.
- Spread a thin layer of butter on each circle, sprinkle with chopped almonds, and fold them over to form half-moons. Seal the edges.
- Brush the tops with beaten egg (if using) for a golden finish, and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Allow the pastries to cool slightly before dusting with powdered sugar and serving.
