- Canned tuna in olive oil - 150 grams
- Almond flour - 50 grams
- Egg - 1 large
- Fresh parsley, chopped - 2 tablespoons
- Garlic clove, minced - 1
- Red bell pepper, finely chopped - 50 grams
- Olive oil - 2 tablespoons (for frying)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon zest - 1 teaspoon
Steps
- Drain the canned tuna and place it in a mixing bowl.
- Add almond flour, egg, chopped parsley, minced garlic, chopped red bell pepper, salt, black pepper, and lemon zest to the bowl.
- Mix the ingredients thoroughly until well combined.
- Form small bite-sized balls or patties from the mixture, about the size of a golf ball.
- Heat olive oil in a non-stick skillet over medium heat.
- Once the oil is hot, carefully add the tuna balls to the skillet, making sure not to overcrowd the pan.
- Cook for about 3-4 minutes on each side, or until golden brown and cooked through.
- Remove from the skillet and place on a paper towel to drain any excess oil.
- Serve warm, garnished with fresh parsley or lemon wedges if desired.
