- Eggs - 4 large
- Potatoes - 200 grams, peeled and thinly sliced
- Onion - 100 grams, finely chopped
- Olive oil - 50 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Crusty bread - 4 slices
- Fresh parsley - for garnish
Steps
- In a skillet, heat 30 ml of olive oil over medium heat.
- Add the thinly sliced potatoes and chopped onion, seasoning with salt and pepper. Cook for about 10-15 minutes until the potatoes are tender and lightly golden, stirring occasionally.
- In a bowl, whisk the eggs together. Once the potatoes and onions are cooked, drain excess oil and add them to the bowl with the whisked eggs. Mix well.
- In the same skillet, add the remaining olive oil and pour in the egg mixture. Cook on low heat for about 5-7 minutes until the bottom is set.
- Carefully flip the tortilla using a plate and cook for another 5-7 minutes on the other side until fully cooked through.
- Remove from heat and let it cool slightly. Cut the tortilla into small squares or wedges.
- Toast the crusty bread slices lightly, then place a piece of tortilla on each slice.
- Garnish with fresh parsley and serve warm or at room temperature.
