Ingredients

  • Eggs - 4 large
  • Potatoes - 200 grams, peeled and thinly sliced
  • Onion - 100 grams, finely chopped
  • Olive oil - 50 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Crusty bread - 4 slices
  • Fresh parsley - for garnish

Steps

  1. In a skillet, heat 30 ml of olive oil over medium heat.
  2. Add the thinly sliced potatoes and chopped onion, seasoning with salt and pepper. Cook for about 10-15 minutes until the potatoes are tender and lightly golden, stirring occasionally.
  3. In a bowl, whisk the eggs together. Once the potatoes and onions are cooked, drain excess oil and add them to the bowl with the whisked eggs. Mix well.
  4. In the same skillet, add the remaining olive oil and pour in the egg mixture. Cook on low heat for about 5-7 minutes until the bottom is set.
  5. Carefully flip the tortilla using a plate and cook for another 5-7 minutes on the other side until fully cooked through.
  6. Remove from heat and let it cool slightly. Cut the tortilla into small squares or wedges.
  7. Toast the crusty bread slices lightly, then place a piece of tortilla on each slice.
  8. Garnish with fresh parsley and serve warm or at room temperature.
