Ingredients

  • Manchego cheese - 100 grams
  • Tomato - 1 medium, sliced
  • Fresh basil leaves - 10 grams
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic glaze - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Slice the crusty bread into 4 equal pieces, each about 5 cm thick.
  2. Toast the bread pieces lightly in a grill pan or toaster until golden brown.
  3. While the bread is toasting, slice the Manchego cheese into thin pieces.
  4. Once the bread is toasted, layer the cheese, tomato slices, and fresh basil leaves on two of the bread pieces.
  5. Drizzle extra virgin olive oil and balsamic glaze over the cheese and vegetables.
  6. Season with salt and black pepper to taste.
  7. Top with the remaining bread pieces to create sandwiches, then cut in half for serving.
