Ingredients
- Whole grain baguette - 1 (about 250g)
- Hummus - 200g
- Zucchini - 1 medium (about 200g)
- Red bell pepper - 1 medium (about 150g)
- Red onion - 1 small (about 100g)
- Cherry tomatoes - 100g
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the grill or a grill pan over medium heat.
- Slice the zucchini, red bell pepper, and red onion into thick strips. Halve the cherry tomatoes.
- In a bowl, toss the sliced vegetables with olive oil, smoked paprika, salt, and black pepper until well coated.
- Place the vegetables on the grill and cook for about 5-7 minutes per side, until they are tender and have grill marks.
- While the vegetables are grilling, slice the whole grain baguette into 4 equal pieces and lightly toast them on the grill for about 2 minutes until golden.
- Once the vegetables are done, remove them from the grill and let them cool slightly.
- Spread a generous layer of hummus on each toasted baguette slice.
- Top with the grilled vegetables and garnish with fresh parsley.
