Ingredients

  • Whole grain baguette - 1 (about 250g)
  • Hummus - 200g
  • Zucchini - 1 medium (about 200g)
  • Red bell pepper - 1 medium (about 150g)
  • Red onion - 1 small (about 100g)
  • Cherry tomatoes - 100g
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Slice the zucchini, red bell pepper, and red onion into thick strips. Halve the cherry tomatoes.
  3. In a bowl, toss the sliced vegetables with olive oil, smoked paprika, salt, and black pepper until well coated.
  4. Place the vegetables on the grill and cook for about 5-7 minutes per side, until they are tender and have grill marks.
  5. While the vegetables are grilling, slice the whole grain baguette into 4 equal pieces and lightly toast them on the grill for about 2 minutes until golden.
  6. Once the vegetables are done, remove them from the grill and let them cool slightly.
  7. Spread a generous layer of hummus on each toasted baguette slice.
  8. Top with the grilled vegetables and garnish with fresh parsley.
  9. Serve immediately and enjoy your Bocadillos de Hummus!
