- Chorizo - 150 grams, sliced
- Baguette or crusty bread - 1 small (about 200 grams)
- Roasted red peppers - 100 grams, sliced
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Fresh parsley - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat a skillet over medium heat.
- Add the sliced chorizo to the skillet and cook for about 5 minutes, turning occasionally, until it is browned and slightly crispy.
- While the chorizo is cooking, cut the baguette in half lengthwise and then into smaller pieces if desired.
- In a small bowl, mix the minced garlic, chopped parsley, olive oil, salt, and black pepper.
- Once the chorizo is cooked, remove it from the skillet and place it on a paper towel to drain excess oil.
- In the same skillet, place the sliced roasted red peppers for about 1-2 minutes to warm them up.
- Assemble the bocadillos by spreading the olive oil mixture on the cut side of the baguette, layering with chorizo and roasted red peppers.
- Close the sandwich and serve warm.
