Ingredients

  • Chorizo - 150 grams, sliced
  • Baguette or crusty bread - 1 small (about 200 grams)
  • Roasted red peppers - 100 grams, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a skillet over medium heat.
  2. Add the sliced chorizo to the skillet and cook for about 5 minutes, turning occasionally, until it is browned and slightly crispy.
  3. While the chorizo is cooking, cut the baguette in half lengthwise and then into smaller pieces if desired.
  4. In a small bowl, mix the minced garlic, chopped parsley, olive oil, salt, and black pepper.
  5. Once the chorizo is cooked, remove it from the skillet and place it on a paper towel to drain excess oil.
  6. In the same skillet, place the sliced roasted red peppers for about 1-2 minutes to warm them up.
  7. Assemble the bocadillos by spreading the olive oil mixture on the cut side of the baguette, layering with chorizo and roasted red peppers.
  8. Close the sandwich and serve warm.
