Bocadillo de Tofu

Ingredients

  • Firm tofu - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat bread rolls - 2 units
  • Ripe tomato - 1 medium, sliced
  • Fresh spinach - 50 grams
  • Avocado - 1 small, sliced
  • Mayonnaise - 2 tablespoons
  • Lemon juice - 1 teaspoon

Steps

  1. Press the firm tofu for about 15 minutes to remove excess moisture, then cut it into two equal slices.
  2. In a bowl, mix olive oil, garlic powder, smoked paprika, salt, and black pepper to create a marinade.
  3. Coat the tofu slices in the marinade and let them sit for 10 minutes to absorb the flavors.
  4. Heat a non-stick skillet over medium heat and add the marinated tofu slices.
  5. Cook the tofu for about 4-5 minutes on each side until golden and crispy.
  6. While the tofu is cooking, slice the whole wheat bread rolls in half.
  7. In a small bowl, mix mayonnaise and lemon juice to create a zesty spread.
  8. Spread the mayonnaise mixture on the inside of each bread roll.
  9. Assemble the bocadillos by placing a slice of the crispy tofu on the bottom half of each roll, followed by slices of tomato, avocado, and a handful of fresh spinach.
  10. Top with the other half of the bread roll, serve immediately, and enjoy your delicious Bocadillo de Tofu!
