- Firm tofu - 250 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat bread rolls - 2 units
- Ripe tomato - 1 medium, sliced
- Fresh spinach - 50 grams
- Avocado - 1 small, sliced
- Mayonnaise - 2 tablespoons
- Lemon juice - 1 teaspoon
Steps
- Press the firm tofu for about 15 minutes to remove excess moisture, then cut it into two equal slices.
- In a bowl, mix olive oil, garlic powder, smoked paprika, salt, and black pepper to create a marinade.
- Coat the tofu slices in the marinade and let them sit for 10 minutes to absorb the flavors.
- Heat a non-stick skillet over medium heat and add the marinated tofu slices.
- Cook the tofu for about 4-5 minutes on each side until golden and crispy.
- While the tofu is cooking, slice the whole wheat bread rolls in half.
- In a small bowl, mix mayonnaise and lemon juice to create a zesty spread.
- Spread the mayonnaise mixture on the inside of each bread roll.
- Assemble the bocadillos by placing a slice of the crispy tofu on the bottom half of each roll, followed by slices of tomato, avocado, and a handful of fresh spinach.
- Top with the other half of the bread roll, serve immediately, and enjoy your delicious Bocadillo de Tofu!
