Ingredients

  • Zucchini - 100g
  • Bell pepper (red) - 50g
  • Bell pepper (green) - 50g
  • Onion - 50g
  • Garlic - 2 cloves
  • Tomato (diced) - 150g
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas (cooked) - 100g
  • Bread rolls (whole grain) - 2
  • Fresh basil - a handful

Steps

  1. Dice the zucchini, bell peppers, onion, and garlic.
  2. Heat olive oil in a large skillet over medium heat and add the diced onion and garlic. Sauté for 3-4 minutes until translucent.
  3. Add the zucchini and bell peppers to the skillet and cook for another 5 minutes, stirring occasionally.
  4. Stir in the diced tomatoes, paprika, salt, and black pepper. Cook for 10 minutes until the tomatoes break down and the mixture thickens.
  5. Add the cooked chickpeas and cook for an additional 5 minutes, allowing the flavors to meld.
  6. While the pisto is cooking, toast the bread rolls until golden brown.
  7. Once the pisto is ready, remove it from heat and stir in fresh basil.
  8. Assemble the Bocadillo by spooning the pisto mixture onto the bottom half of each toasted bread roll. Top with the other half and serve immediately.
