- Zucchini - 100g
- Bell pepper (red) - 50g
- Bell pepper (green) - 50g
- Onion - 50g
- Garlic - 2 cloves
- Tomato (diced) - 150g
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas (cooked) - 100g
- Bread rolls (whole grain) - 2
- Fresh basil - a handful
Steps
- Dice the zucchini, bell peppers, onion, and garlic.
- Heat olive oil in a large skillet over medium heat and add the diced onion and garlic. Sauté for 3-4 minutes until translucent.
- Add the zucchini and bell peppers to the skillet and cook for another 5 minutes, stirring occasionally.
- Stir in the diced tomatoes, paprika, salt, and black pepper. Cook for 10 minutes until the tomatoes break down and the mixture thickens.
- Add the cooked chickpeas and cook for an additional 5 minutes, allowing the flavors to meld.
- While the pisto is cooking, toast the bread rolls until golden brown.
- Once the pisto is ready, remove it from heat and stir in fresh basil.
- Assemble the Bocadillo by spooning the pisto mixture onto the bottom half of each toasted bread roll. Top with the other half and serve immediately.
