- Pork loin - 300 grams
- Gluten-free sandwich bread - 2 slices
- Olive oil - 2 tablespoons
- Garlic cloves - 2, minced
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red bell pepper - 1, sliced
- Green bell pepper - 1, sliced
- Fresh parsley - a handful, chopped
- Lemon juice - 1 tablespoon
Steps
- In a bowl, mix olive oil, minced garlic, paprika, salt, and black pepper. Add the pork loin and marinate for at least 15 minutes.
- While the pork is marinating, heat a skillet over medium heat and add a tablespoon of olive oil. Add the sliced red and green bell peppers and sauté until they are tender, about 5-7 minutes.
- Remove the peppers from the skillet and set aside. In the same skillet, add the marinated pork loin and cook for about 4-5 minutes on each side, or until the pork is cooked through and golden brown.
- Once cooked, let the pork rest for a few minutes before slicing it thinly.
- To assemble the bocadillo, place a generous amount of sliced pork on one slice of gluten-free bread, top with sautéed peppers, chopped parsley, and a drizzle of lemon juice. Close the sandwich with the other slice of bread.
