Ingredients

  • Asparagus - 200 grams
  • Canned chickpeas - 240 grams (drained and rinsed)
  • Garlic - 2 cloves (minced)
  • Red onion - 50 grams (finely chopped)
  • Fresh parsley - 2 tablespoons (chopped)
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Breadcrumbs - 50 grams
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bread rolls - 2
  • Lettuce leaves - 2
  • Tomato - 1 (sliced)
  • Mayonnaise - 2 tablespoons (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Trim the woody ends of the asparagus and toss them with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 10-12 minutes until tender and slightly charred.
  3. In a mixing bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth with some chunks remaining.
  4. Add minced garlic, chopped red onion, parsley, cumin, paprika, breadcrumbs, salt, and pepper to the mashed chickpeas. Mix until well combined.
  5. Form the mixture into two patties and refrigerate for 10 minutes to help them hold their shape.
  6. Heat the remaining 1 tablespoon of olive oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
  7. To assemble the bocadillo, slice the bread rolls in half. Place a lettuce leaf on each roll, add the chickpea patty, top with roasted asparagus, and finish with tomato slices and mayonnaise if desired.
  8. Serve immediately and enjoy your Bocadillo de Espárragos!
