- Asparagus - 200 grams
- Canned chickpeas - 240 grams (drained and rinsed)
- Garlic - 2 cloves (minced)
- Red onion - 50 grams (finely chopped)
- Fresh parsley - 2 tablespoons (chopped)
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Breadcrumbs - 50 grams
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Bread rolls - 2
- Lettuce leaves - 2
- Tomato - 1 (sliced)
- Mayonnaise - 2 tablespoons (optional)
Steps
- Preheat your oven to 200°C (400°F).
- Trim the woody ends of the asparagus and toss them with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 10-12 minutes until tender and slightly charred.
- In a mixing bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth with some chunks remaining.
- Add minced garlic, chopped red onion, parsley, cumin, paprika, breadcrumbs, salt, and pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two patties and refrigerate for 10 minutes to help them hold their shape.
- Heat the remaining 1 tablespoon of olive oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
- To assemble the bocadillo, slice the bread rolls in half. Place a lettuce leaf on each roll, add the chickpea patty, top with roasted asparagus, and finish with tomato slices and mayonnaise if desired.
- Serve immediately and enjoy your Bocadillo de Espárragos!
