- Baguette - 1 large
- Fresh arugula - 50 grams
- Tomato - 1 medium, sliced
- Red onion - 1/2, thinly sliced
- Mayonnaise - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat your grill or skillet over medium heat.
- In a bowl, mix olive oil, minced garlic, smoked paprika, salt, and black pepper to create a marinade.
- Remove the stems from the Portobello mushrooms and brush both sides with the marinade.
- Grill the mushrooms for about 5-7 minutes on each side, until they are tender and have nice grill marks.
- While the mushrooms are cooking, prepare the aioli by mixing mayonnaise, lemon juice, and chopped parsley in a small bowl.
- Slice the baguette in half lengthwise and lightly toast it on the grill or skillet for 2-3 minutes.
