Ingredients

  • Portobello mushrooms - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baguette - 1 large
  • Fresh arugula - 50 grams
  • Tomato - 1 medium, sliced
  • Red onion - 1/2, thinly sliced
  • Mayonnaise - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Preheat your grill or skillet over medium heat.
  2. In a bowl, mix olive oil, minced garlic, smoked paprika, salt, and black pepper to create a marinade.
  3. Remove the stems from the Portobello mushrooms and brush both sides with the marinade.
  4. Grill the mushrooms for about 5-7 minutes on each side, until they are tender and have nice grill marks.
  5. While the mushrooms are cooking, prepare the aioli by mixing mayonnaise, lemon juice, and chopped parsley in a small bowl.
  6. Slice the baguette in half lengthwise and lightly toast it on the grill or skillet for 2-3 minutes.
  7. Spread the aioli generously on both sides of the toasted baguette.
  8. Layer fresh arugula, grilled mushrooms, sliced tomato, and red onion inside the baguette.
  9. Close the sandwich, slice it in half, and serve immediately.
