Ingredients

  • Ground beef - 300 grams
  • Zucchini - 1 medium, sliced into 1 cm thick rounds
  • Red bell pepper - 1, sliced
  • Onion - 1 small, sliced
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - for garnish

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. In a bowl, mix ground beef, minced garlic, paprika, cumin, salt, and black pepper until well combined.
  3. Form the meat mixture into two burger patties.
  4. Drizzle the sliced zucchini, red bell pepper, and onion with olive oil, and season with salt and pepper.
  5. Grill the vegetable slices for about 3-4 minutes on each side until they are tender and have grill marks.
  6. In the same grill, cook the burger patties for about 4-5 minutes on each side for medium doneness.
  7. To assemble, place a burger patty on top of two slices of grilled zucchini, add grilled bell pepper and onion on top, and garnish with fresh parsley.
