- Zucchini - 1 medium, sliced into 1 cm thick rounds
- Red bell pepper - 1, sliced
- Onion - 1 small, sliced
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - for garnish
Steps
- Preheat a grill or grill pan over medium-high heat.
- In a bowl, mix ground beef, minced garlic, paprika, cumin, salt, and black pepper until well combined.
- Form the meat mixture into two burger patties.
- Drizzle the sliced zucchini, red bell pepper, and onion with olive oil, and season with salt and pepper.
- Grill the vegetable slices for about 3-4 minutes on each side until they are tender and have grill marks.
- In the same grill, cook the burger patties for about 4-5 minutes on each side for medium doneness.
- To assemble, place a burger patty on top of two slices of grilled zucchini, add grilled bell pepper and onion on top, and garnish with fresh parsley.
