Ingredients

  • Zucchini - 300 grams
  • Chickpeas - 100 grams (cooked and drained)
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Garlic - 1 clove (minced)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Whole grain rolls - 2
  • Fresh spinach - 50 grams
  • Tomato - 1 (sliced)
  • Avocado - 1/2 (sliced)
  • Lemon juice - 1 tablespoon

Steps

  1. Grate the zucchini and place it in a clean kitchen towel to remove excess moisture.
  2. In a bowl, combine the grated zucchini, cooked chickpeas, breadcrumbs, egg, minced garlic, cumin, paprika, salt, and black pepper. Mix well until combined.
  3. Form the mixture into two patties and let them sit for 10 minutes to firm up.
  4. Heat 1 tablespoon of olive oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and cooked through.
  5. While the patties cook, lightly toast the whole grain rolls in a separate pan or oven.
  6. To assemble the bocadillos, place a zucchini patty on the bottom half of each roll, top with fresh spinach, sliced tomato, and avocado. Drizzle with lemon juice.
  7. Close the rolls and serve immediately, with any remaining toppings on the side.
