- Whole grain rolls - 2
- Fresh spinach - 50 grams
- Tomato - 1 (sliced)
- Avocado - 1/2 (sliced)
- Lemon juice - 1 tablespoon
Steps
- Grate the zucchini and place it in a clean kitchen towel to remove excess moisture.
- In a bowl, combine the grated zucchini, cooked chickpeas, breadcrumbs, egg, minced garlic, cumin, paprika, salt, and black pepper. Mix well until combined.
- Form the mixture into two patties and let them sit for 10 minutes to firm up.
- Heat 1 tablespoon of olive oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and cooked through.
- While the patties cook, lightly toast the whole grain rolls in a separate pan or oven.
- To assemble the bocadillos, place a zucchini patty on the bottom half of each roll, top with fresh spinach, sliced tomato, and avocado. Drizzle with lemon juice.
