Ingredients

  • Eggplant - 1 medium (about 250g)
  • Salt - 1 teaspoon
  • Olive oil - 4 tablespoons
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Ground black pepper - 1/2 teaspoon
  • Flour - 1/4 cup (30g)
  • Egg - 1 large
  • Breadcrumbs - 1 cup (100g)
  • Burger buns - 2
  • Fresh spinach - 1 cup
  • Tomato - 1 medium, sliced
  • Red onion - 1/4, thinly sliced
  • Greek yogurt - 1/2 cup (120g)
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture and bitterness.
  2. Rinse the eggplant slices under cold water and pat dry with paper towels.
  3. In a shallow bowl, mix flour, garlic powder, smoked paprika, and black pepper. In another bowl, beat the egg. In a third bowl, place the breadcrumbs.
  4. Dip each eggplant slice first in the flour mixture, then in the beaten egg, and finally coat with breadcrumbs.
  5. Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat. Fry the eggplant slices for 3-4 minutes on each side, or until golden brown and crispy. Add more oil as needed.
  6. In a small bowl, mix Greek yogurt, lemon juice, and chopped cilantro to make the sauce.
  7. Toast the burger buns lightly in the skillet or oven.
  8. Assemble each burger by placing a fried eggplant slice on the bottom half of the bun, adding fresh spinach, tomato slices, and red onion. Drizzle with the yogurt sauce and top with the other half of the bun.
  9. Serve immediately and enjoy your Bocadillo de Berenjena!
