Ingredients

  • Plain yogurt - 125 grams
  • Granulated sugar - 100 grams
  • Vegetable oil - 50 ml
  • Eggs - 2 large
  • All-purpose flour - 150 grams
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Pinch of salt - 1

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small cake pan (approximately 20 cm in diameter).
  2. In a mixing bowl, combine the plain yogurt, granulated sugar, and vegetable oil. Mix well until smooth.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool for a few minutes in the pan before transferring it to a wire rack to cool completely.
