- Plain yogurt - 125 grams
- Granulated sugar - 100 grams
- Vegetable oil - 50 ml
- Eggs - 2 large
- All-purpose flour - 150 grams
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Lemon zest - 1 teaspoon
- Pinch of salt - 1
Steps
- Preheat your oven to 180°C (350°F) and grease a small cake pan (approximately 20 cm in diameter).
- In a mixing bowl, combine the plain yogurt, granulated sugar, and vegetable oil. Mix well until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for a few minutes in the pan before transferring it to a wire rack to cool completely.
