  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the grill or BBQ to a medium-high heat.
  2. Slice the eggplant into 1 cm thick rounds and place them in a bowl.
  3. In a separate small bowl, mix the olive oil, minced garlic, smoked paprika, salt, and black pepper.
  4. Drizzle the olive oil mixture over the eggplant slices, ensuring they are well coated.
  5. Place the eggplant slices on the grill and cook for about 6-8 minutes on each side, or until they are tender and have nice grill marks.
  6. Once cooked, remove the eggplant from the grill and place them on a serving platter.
  7. Drizzle lemon juice over the eggplant and sprinkle with chopped fresh parsley before serving.
