Ingredients
- Ground beef - 200 grams
- Chicken breast - 150 grams
- Chorizo (Halal) - 100 grams
- Black beans - 200 grams (cooked)
- Rice - 150 grams (uncooked)
- Plantains - 2 medium
- Avocado - 1 whole
- Eggs - 2 large
- Garlic - 2 cloves (minced)
- Onion - 1 medium (chopped)
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a pan, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
- Add ground beef to the pan, season with cumin, paprika, salt, and pepper. Cook until browned, then remove from heat.
- In a separate skillet, heat 1 tablespoon of olive oil and cook the chicken breast until fully cooked, about 6-7 minutes per side. Once cooked, slice it into strips.
- In the same skillet, grill the Halal chorizo until browned, about 5 minutes. Remove and slice into rounds.
- Cook the black beans in a pot over low heat, adding a pinch of salt and pepper to taste.
- Prepare the rice according to package instructions. Typically, combine 150 grams of rice with 300 ml of water and a pinch of salt, bring to a boil, then simmer until cooked.
- Peel and slice the plantains diagonally. Fry them in a skillet with a little olive oil until golden brown, about 3-4 minutes per side.
- In a small pot, boil water and gently add the eggs, cooking for 6-7 minutes for soft-boiled. Remove and place in cold water, then peel.
- To assemble the Bandeja Paisa, place a generous serving of rice on each plate, followed by the black beans, ground beef, sliced chicken, chorizo, fried plantains, and half an avocado.
- Top with the soft-boiled egg, garnish with fresh cilantro, and serve immediately.
