Ingredients

  • Salt cod - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1 small, sliced
  • Lettuce - 100 grams, for serving

Steps

  1. Soak the salt cod in water for 24 hours, changing the water several times to remove excess salt.
  2. Preheat the grill to medium-high heat.
  3. In a bowl, mix the olive oil, minced garlic, paprika, chopped parsley, lemon juice, and black pepper to create a marinade.
  4. Once the cod is soaked and desalted, pat it dry and place it in the marinade, ensuring it is well coated. Let it marinate for 15 minutes.
  5. In the meantime, prepare the cherry tomatoes and sliced red onion, tossing them with a little olive oil, salt, and pepper.
  6. Place the marinated cod on the grill and cook for about 6-8 minutes on each side or until it flakes easily with a fork.
  7. While the cod is grilling, place the cherry tomatoes and onions on the grill and cook for about 5 minutes, until slightly charred.
  8. Serve the grilled bacalao on a bed of lettuce, topped with the grilled cherry tomatoes and onions.
