- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Black pepper - to taste
- Cherry tomatoes - 100 grams, halved
- Red onion - 1 small, sliced
- Lettuce - 100 grams, for serving
Steps
- Soak the salt cod in water for 24 hours, changing the water several times to remove excess salt.
- Preheat the grill to medium-high heat.
- In a bowl, mix the olive oil, minced garlic, paprika, chopped parsley, lemon juice, and black pepper to create a marinade.
- Once the cod is soaked and desalted, pat it dry and place it in the marinade, ensuring it is well coated. Let it marinate for 15 minutes.
- In the meantime, prepare the cherry tomatoes and sliced red onion, tossing them with a little olive oil, salt, and pepper.
- Place the marinated cod on the grill and cook for about 6-8 minutes on each side or until it flakes easily with a fork.
- While the cod is grilling, place the cherry tomatoes and onions on the grill and cook for about 5 minutes, until slightly charred.
- Serve the grilled bacalao on a bed of lettuce, topped with the grilled cherry tomatoes and onions.
