Ingredients
- Beef short ribs - 600 grams
- Onion - 1 medium, chopped
- Garlic - 4 cloves, minced
- Paprika - 1 tablespoon
- Cumin - 1 teaspoon
- Olive oil - 2 tablespoons
- Carrot - 1 medium, chopped
- Celery - 1 stalk, chopped
- Tomato paste - 2 tablespoons
- Red wine - 150 ml
- Beef broth - 250 ml
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat your oven to 160°C (320°F).
- In a large oven-safe pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped carrot and celery, and cook for another 5 minutes, stirring occasionally.
- Season the beef short ribs with salt, black pepper, paprika, and cumin. Sear the short ribs in the pot until browned on all sides, about 8-10 minutes.
- Add the tomato paste and stir to coat the meat and vegetables.
- Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow it to simmer for 5 minutes.
- Add the beef broth and bay leaf, then bring to a gentle boil.
- Cover the pot with a lid and transfer it to the preheated oven. Cook for 2 hours or until the meat is tender and falling off the bone.
- Remove the pot from the oven and let it rest for 10 minutes. Discard the bay leaf.
- Serve the asado de tira hot, garnished with fresh parsley.
