- Bomba rice - 150 grams
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, grated
- Black squid ink - 2 tablespoons
- Frozen peas - 100 grams
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced red and green bell peppers, and cook for another 5 minutes until the peppers soften.
- Add the grated tomato to the skillet and cook for an additional 3 minutes, allowing the mixture to combine well.
- Stir in the Bomba rice, ensuring that the rice is well-coated with the vegetable mixture. Toast the rice for about 2 minutes.
- Pour in the vegetable broth and add the black squid ink. Stir well to combine and season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 18-20 minutes or until the rice is cooked and has absorbed the liquid.
- In the last 5 minutes of cooking, add the frozen peas to the rice, stirring gently to incorporate.
- Once cooked, remove from heat and let it rest for 5 minutes before serving. Garnish with fresh parsley before serving.
