- Red bell pepper - 1 small, diced
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - to taste
- Fresh basil - a handful, chopped
- Lemon juice - 1 tablespoon
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the diced red bell pepper to the saucepan and cook for an additional 2-3 minutes until it softens.
- Stir in the chopped tomatoes, paprika, salt, and black pepper. Cook for about 5 minutes, allowing the tomatoes to break down and create a sauce.
- Add the basmati rice to the tomato mixture, stirring to combine, and toast the rice for 1-2 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
- Remove the saucepan from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
- Stir in the fresh basil and lemon juice just before serving. Adjust seasoning if needed.
