  • Red bell pepper - 1 small, diced
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - to taste
  • Fresh basil - a handful, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  2. Add the diced red bell pepper to the saucepan and cook for an additional 2-3 minutes until it softens.
  3. Stir in the chopped tomatoes, paprika, salt, and black pepper. Cook for about 5 minutes, allowing the tomatoes to break down and create a sauce.
  4. Add the basmati rice to the tomato mixture, stirring to combine, and toast the rice for 1-2 minutes.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
  6. Remove the saucepan from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
  7. Stir in the fresh basil and lemon juice just before serving. Adjust seasoning if needed.
