  • Vegetable broth - 500 milliliters
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Red bell pepper - 1/2, diced
  • Saffron threads - a pinch
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, soak the saffron threads in a couple of tablespoons of warm water to release their flavor.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and red bell pepper, sautéing until softened, about 5 minutes.
  3. Add minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are tender, about 5-7 minutes.
  4. Stir in the Arborio rice, allowing it to toast for 1-2 minutes while stirring frequently.
  5. Pour in the vegetable broth and the saffron water. Season with salt and black pepper. Bring to a simmer.
  6. Reduce heat to low, cover, and cook for about 15-20 minutes, or until the rice is creamy and has absorbed most of the liquid. Stir occasionally to prevent sticking.
  7. Once cooked, remove from heat and stir in fresh parsley and lemon juice. Adjust seasoning if needed.
  8. Let it sit for a few minutes before serving warm.
