- Vegetable broth - 500 milliliters
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Red bell pepper - 1/2, diced
- Saffron threads - a pinch
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a small bowl, soak the saffron threads in a couple of tablespoons of warm water to release their flavor.
- Heat olive oil in a large skillet over medium heat. Add diced onion and red bell pepper, sautéing until softened, about 5 minutes.
- Add minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are tender, about 5-7 minutes.
- Stir in the Arborio rice, allowing it to toast for 1-2 minutes while stirring frequently.
- Pour in the vegetable broth and the saffron water. Season with salt and black pepper. Bring to a simmer.
- Reduce heat to low, cover, and cook for about 15-20 minutes, or until the rice is creamy and has absorbed most of the liquid. Stir occasionally to prevent sticking.
- Once cooked, remove from heat and stir in fresh parsley and lemon juice. Adjust seasoning if needed.
- Let it sit for a few minutes before serving warm.
