- Vegetable broth - 400 ml
- Fresh cilantro - 30 grams, chopped
- Fresh parsley - 30 grams, chopped
- Jalapeño pepper - 1 small, deseeded and chopped
- Lime juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and chopped jalapeño pepper to the saucepan and cook for an additional 1-2 minutes until fragrant.
- Stir in the rinsed rice, ensuring it's well coated with the oil and mixed with the onion and garlic.
- Pour in the vegetable broth, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, prepare the salsa verde by blending the chopped cilantro, parsley, lime juice, a pinch of salt, and a tablespoon of water until smooth.
- Once the rice is done, fluff it with a fork and drizzle the salsa verde over the top. Gently mix to combine, and serve immediately.
