Ingredients

  • Basmati rice - 150 grams

  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 ml
  • Fresh cilantro - 30 grams, chopped
  • Fresh parsley - 30 grams, chopped
  • Jalapeño pepper - 1 small, deseeded and chopped
  • Lime juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic and chopped jalapeño pepper to the saucepan and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the rinsed rice, ensuring it's well coated with the oil and mixed with the onion and garlic.
  5. Pour in the vegetable broth, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed.
  6. While the rice is cooking, prepare the salsa verde by blending the chopped cilantro, parsley, lime juice, a pinch of salt, and a tablespoon of water until smooth.
  7. Once the rice is done, fluff it with a fork and drizzle the salsa verde over the top. Gently mix to combine, and serve immediately.
