- Brown rice - 150 grams
- Chicken breast - 200 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Tomato - 1 medium, diced
- Chicken broth - 400 ml
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken breast and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add chopped onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes.
- Add diced bell pepper, carrot, and tomato to the skillet. Stir and cook for another 5 minutes.
- Stir in the brown rice, paprika, cumin, salt, and black pepper. Mix well to coat the rice with the spices.
- Return the chicken to the skillet, then pour in the chicken broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 30 minutes, or until the rice is cooked and liquid is absorbed.
- Add green peas in the last 5 minutes of cooking. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve warm.
