Ingredients

  • Brown rice - 150 grams
  • Chicken breast - 200 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Tomato - 1 medium, diced
  • Chicken broth - 400 ml
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken breast and cook until browned, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add chopped onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes.
  4. Add diced bell pepper, carrot, and tomato to the skillet. Stir and cook for another 5 minutes.
  5. Stir in the brown rice, paprika, cumin, salt, and black pepper. Mix well to coat the rice with the spices.
  6. Return the chicken to the skillet, then pour in the chicken broth. Bring to a boil.
  7. Reduce heat to low, cover, and simmer for about 30 minutes, or until the rice is cooked and liquid is absorbed.
  8. Add green peas in the last 5 minutes of cooking. Fluff the rice with a fork before serving.
  9. Garnish with fresh parsley and serve warm.
