- Red bell pepper, sliced - 1 medium
- Green bell pepper, sliced - 1 medium
- Short-grain rice (such as Bomba or Arborio) - 150 grams
- Chicken broth - 500 milliliters
- Paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - for garnish
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and season with salt and black pepper. Sear on both sides until golden brown, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent.
- Add the sliced red and green bell peppers to the skillet and cook for another 3-4 minutes until they begin to soften.
- Stir in the rice, paprika, and saffron, mixing well to coat the rice in the oil and spices.
- Pour in the chicken broth and bring to a simmer. Return the chicken thighs to the skillet, nestling them into the rice.
- Cover the skillet and reduce the heat to low. Cook for about 20 minutes or until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork and garnish with chopped fresh parsley before serving.
