  • Red bell pepper, sliced - 1 medium
  • Green bell pepper, sliced - 1 medium
  • Short-grain rice (such as Bomba or Arborio) - 150 grams
  • Chicken broth - 500 milliliters
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - for garnish

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and season with salt and black pepper. Sear on both sides until golden brown, about 5-7 minutes. Remove the chicken and set aside.
  2. In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent.
  3. Add the sliced red and green bell peppers to the skillet and cook for another 3-4 minutes until they begin to soften.
  4. Stir in the rice, paprika, and saffron, mixing well to coat the rice in the oil and spices.
  5. Pour in the chicken broth and bring to a simmer. Return the chicken thighs to the skillet, nestling them into the rice.
  6. Cover the skillet and reduce the heat to low. Cook for about 20 minutes or until the rice is tender and has absorbed the liquid.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork and garnish with chopped fresh parsley before serving.
