Ingredients

  • Arborio rice - 150 grams
  • Pimientos del Piquillo (jarred) - 100 grams
  • Chicken breast (diced) - 150 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Paprika (smoked) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon wedges - for serving

Steps

  1. Heat the olive oil in a medium-sized pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and smoked paprika, cooking for an additional minute until fragrant.
  3. Add the diced chicken breast to the pan, seasoning with salt and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
  4. Incorporate the Arborio rice into the pan, stirring to coat the grains with the oil and flavors for about 2 minutes.
  5. Pour in the vegetable broth and add the chopped pimientos del piquillo. Bring to a gentle boil, then reduce the heat to low. Cover the pan and let it simmer for 15-20 minutes, or until the rice has absorbed most of the liquid and is tender.
  6. Once cooked, remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley.
  7. Serve warm with lemon wedges on the side.
