- Yellow bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the diced red, yellow, and green bell peppers to the saucepan. Cook for another 5 minutes, stirring occasionally until the peppers begin to soften.
- Stir in the rinsed rice, paprika, salt, and black pepper, mixing well to coat the rice with the oil and spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
