  • Basmati rice - 150 grams
  • Red bell pepper - 1 medium, diced
  • Yellow bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Add the diced red, yellow, and green bell peppers to the saucepan. Cook for another 5 minutes, stirring occasionally until the peppers begin to soften.
  4. Stir in the rinsed rice, paprika, salt, and black pepper, mixing well to coat the rice with the oil and spices.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
  6. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
