- Red bell pepper - 1, diced
- Tomato - 1 medium, chopped
- Fish stock - 400ml
- Paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a large skillet or paella pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
- Add the diced red bell pepper and chopped tomato to the skillet, cooking for about 5 minutes until softened.
- Stir in the soaked rice, paprika, saffron, salt, and black pepper, mixing well to coat the rice with the spices.
- Pour in the fish stock and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 10 minutes.
- After 10 minutes, place the white fish fillets on top of the rice, cover again, and cook for an additional 8-10 minutes until the fish is cooked through and the rice has absorbed the liquid.
- Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
