  • Onion - 1 small, diced
  • Red bell pepper - 1, diced
  • Tomato - 1 medium, chopped
  • Fish stock - 400ml
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large skillet or paella pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
  3. Add the diced red bell pepper and chopped tomato to the skillet, cooking for about 5 minutes until softened.
  4. Stir in the soaked rice, paprika, saffron, salt, and black pepper, mixing well to coat the rice with the spices.
  5. Pour in the fish stock and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 10 minutes.
  6. After 10 minutes, place the white fish fillets on top of the rice, cover again, and cook for an additional 8-10 minutes until the fish is cooked through and the rice has absorbed the liquid.
  7. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
