- Duck legs - 2 pieces (about 300g each)
- Brown rice - 150g
- Chicken broth - 500ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Green peas - 100g, fresh or frozen
- Saffron strands - a pinch
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large skillet, heat olive oil over medium heat. Season the duck legs with salt and black pepper, then add them to the skillet skin-side down. Cook for about 5-7 minutes until the skin is golden and crispy, then flip and cook for another 5 minutes. Remove the duck and set aside.
- In the same skillet, add the chopped onion, garlic, and bell pepper. Sauté for 3-4 minutes until softened. Stir in the diced tomato, paprika, and saffron, cooking for another 2 minutes.
- Add the brown rice to the skillet, stirring to coat it in the vegetable mixture. Pour in the chicken broth and bring to a simmer.
- Return the duck legs to the skillet, nestling them into the rice. Cover and cook on low heat for about 25-30 minutes, or until the rice is tender and has absorbed most of the liquid.
- In the last 5 minutes of cooking, add the green peas. Adjust seasoning with salt and pepper if needed.
- Once cooked, remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, garnish with fresh parsley, and serve hot.
