Ingredients

  • Duck legs - 2 pieces (about 300g each)
  • Brown rice - 150g
  • Chicken broth - 500ml
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Green peas - 100g, fresh or frozen
  • Saffron strands - a pinch
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large skillet, heat olive oil over medium heat. Season the duck legs with salt and black pepper, then add them to the skillet skin-side down. Cook for about 5-7 minutes until the skin is golden and crispy, then flip and cook for another 5 minutes. Remove the duck and set aside.
  2. In the same skillet, add the chopped onion, garlic, and bell pepper. Sauté for 3-4 minutes until softened. Stir in the diced tomato, paprika, and saffron, cooking for another 2 minutes.
  3. Add the brown rice to the skillet, stirring to coat it in the vegetable mixture. Pour in the chicken broth and bring to a simmer.
  4. Return the duck legs to the skillet, nestling them into the rice. Cover and cook on low heat for about 25-30 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. In the last 5 minutes of cooking, add the green peas. Adjust seasoning with salt and pepper if needed.
  6. Once cooked, remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, garnish with fresh parsley, and serve hot.
