  • Shrimp - 100 grams, peeled and deveined
  • Mussels - 100 grams, cleaned
  • Calamari - 100 grams, sliced
  • Frozen peas - 50 grams
  • Fresh parsley - for garnish, chopped
  • Lemon - 1, cut into wedges

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sauté for 5 minutes until softened.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the Arborio rice to the skillet, stirring for 2 minutes to coat the rice with the oil and vegetables.
  4. Pour in the vegetable broth, and add the diced tomato, saffron, paprika, salt, and black pepper. Bring to a gentle simmer.
  5. Cover the skillet and cook for 15 minutes, stirring occasionally, until the rice is almost tender.
  6. Add the shrimp, mussels, calamari, and frozen peas to the skillet. Cover and cook for another 5-7 minutes until the seafood is cooked through and the mussels have opened.
  7. Remove from heat and let it rest for a few minutes. Fluff the rice with a fork and garnish with fresh parsley.
