- Shrimp - 100 grams, peeled and deveined
- Mussels - 100 grams, cleaned
- Calamari - 100 grams, sliced
- Frozen peas - 50 grams
- Fresh parsley - for garnish, chopped
- Lemon - 1, cut into wedges
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sauté for 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the Arborio rice to the skillet, stirring for 2 minutes to coat the rice with the oil and vegetables.
- Pour in the vegetable broth, and add the diced tomato, saffron, paprika, salt, and black pepper. Bring to a gentle simmer.
- Cover the skillet and cook for 15 minutes, stirring occasionally, until the rice is almost tender.
- Add the shrimp, mussels, calamari, and frozen peas to the skillet. Cover and cook for another 5-7 minutes until the seafood is cooked through and the mussels have opened.
- Remove from heat and let it rest for a few minutes. Fluff the rice with a fork and garnish with fresh parsley.
