Ingredients

  • Brown rice - 150 grams
  • Green lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown rice and lentils under cold water until the water runs clear.
  2. In a medium pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the diced red bell pepper and carrot to the pot, cooking for another 5 minutes until softened.
  4. Stir in the diced tomato, smoked paprika, cumin, salt, and black pepper, cooking for an additional 3 minutes.
  5. Add the rinsed brown rice and lentils to the pot, stirring to combine with the vegetables.
  6. Pour in the vegetable broth and bring to a boil, then reduce to a simmer and cover the pot.
  7. Cook for about 30-35 minutes or until the rice and lentils are tender and the liquid has been absorbed, stirring occasionally.
  8. Once cooked, remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  9. Serve warm, garnished with fresh parsley.
