- Brown rice - 150 grams
- Green lentils - 100 grams

- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Carrot - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- Rinse the brown rice and lentils under cold water until the water runs clear.
- In a medium pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the diced red bell pepper and carrot to the pot, cooking for another 5 minutes until softened.
- Stir in the diced tomato, smoked paprika, cumin, salt, and black pepper, cooking for an additional 3 minutes.
- Add the rinsed brown rice and lentils to the pot, stirring to combine with the vegetables.
- Pour in the vegetable broth and bring to a boil, then reduce to a simmer and cover the pot.
- Cook for about 30-35 minutes or until the rice and lentils are tender and the liquid has been absorbed, stirring occasionally.
- Once cooked, remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- Serve warm, garnished with fresh parsley.
