  • Cinnamon stick - 1
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Salt - a pinch
  • Ground cinnamon - for garnish
  • Raisins (optional) - 30 grams

Steps

  1. In a medium saucepan, combine the Arborio rice, whole milk, sugar, cinnamon stick, lemon zest, and a pinch of salt.
  2. Bring the mixture to a gentle boil over medium heat, stirring frequently to prevent the rice from sticking.
  3. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
  4. Remove the saucepan from heat and stir in the vanilla extract. If using, add the raisins at this stage.
  5. Let the arroz con leche cool slightly before serving. Remove the cinnamon stick.
  6. Serve warm or chilled, garnished with a sprinkle of ground cinnamon on top.
