- Raisins (optional) - 30 grams
Steps
- In a medium saucepan, combine the Arborio rice, whole milk, sugar, cinnamon stick, lemon zest, and a pinch of salt.
- Bring the mixture to a gentle boil over medium heat, stirring frequently to prevent the rice from sticking.
- Once boiling, reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
- Remove the saucepan from heat and stir in the vanilla extract. If using, add the raisins at this stage.
- Let the arroz con leche cool slightly before serving. Remove the cinnamon stick.
