- Red bell pepper - 1/2, diced
- Tomato - 1 medium, diced
- Vegetable broth - 400 milliliters
- Paprika - 1 teaspoon
- Saffron - a pinch (optional)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced red bell pepper, sautéing for an additional 2 minutes until fragrant.
- Stir in the diced tomato and cook for another 2-3 minutes until the tomato softens.
- Add the green beans and sauté for 3-4 minutes, allowing them to slightly soften.
- Stir in the rice, paprika, saffron (if using), salt, and pepper. Cook for 1-2 minutes to lightly toast the rice.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
