- Onion - 1 small, diced
- Bell pepper - 1/2, diced
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 2 large
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced bell pepper and continue to sauté for another 2-3 minutes.
- Stir in the rinsed rice, paprika, salt, and black pepper. Cook for 1-2 minutes, stirring frequently to toast the rice slightly.
- Pour in the water and bring to a boil. Once boiling, reduce heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, heat the remaining tablespoon of olive oil in a non-stick skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up or over easy), about 3-5 minutes.
- Once the rice is done, fluff it with a fork and divide it between two plates. Top each serving with a cooked egg.
- Garnish with chopped fresh parsley before serving.
