Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml

  • Onion - 1 small, diced
  • Bell pepper - 1/2, diced
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 2 large
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the diced bell pepper and continue to sauté for another 2-3 minutes.
  4. Stir in the rinsed rice, paprika, salt, and black pepper. Cook for 1-2 minutes, stirring frequently to toast the rice slightly.
  5. Pour in the water and bring to a boil. Once boiling, reduce heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is tender and the water is absorbed.
  6. While the rice is cooking, heat the remaining tablespoon of olive oil in a non-stick skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up or over easy), about 3-5 minutes.
  7. Once the rice is done, fluff it with a fork and divide it between two plates. Top each serving with a cooked egg.
  8. Garnish with chopped fresh parsley before serving.
