Ingredients

  • Brown rice - 150 grams
  • Green peas (fresh or frozen) - 100 grams
  • Vegetable broth - 400 ml
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Onion (finely chopped) - 1 small
  • Red bell pepper (diced) - 1/2
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley (chopped) - 1 tablespoon

Steps

  1. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are translucent (about 3-4 minutes).
  2. Stir in the diced red bell pepper and cook for another 2 minutes until slightly softened.
  3. Add the brown rice to the pan, stirring well to coat the grains with the oil and flavors.
  4. Pour in the vegetable broth, then add the paprika, salt, and black pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 20 minutes until the rice is tender and has absorbed the liquid.
  6. After 20 minutes, stir in the green peas and cook for an additional 5 minutes with the lid on.
  7. Remove from heat, fluff the rice with a fork, and garnish with fresh parsley before serving.
