- Tomato - 1 medium, chopped
- Chickpeas - 240 grams (1 can, drained and rinsed)
- Long-grain rice - 150 grams
- Vegetable broth - 500 ml
- Paprika - 1 teaspoon
- Saffron - a pinch (optional)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced red bell pepper, cooking for another 3-4 minutes until softened.
- Add the chopped tomato and cook for an additional 3 minutes, allowing it to break down slightly.
- Mix in the drained chickpeas, paprika, saffron (if using), salt, and pepper, stirring well to combine.
- Add the rice and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
- Allow the rice to simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
- Once cooked, remove from heat and let it sit, covered, for 5 minutes to steam.
- Fluff the rice with a fork, taste, and adjust seasoning if necessary. Serve garnished with fresh parsley.
