  • Tomato - 1 medium, chopped
  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Long-grain rice - 150 grams
  • Vegetable broth - 500 ml
  • Paprika - 1 teaspoon
  • Saffron - a pinch (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and diced red bell pepper, cooking for another 3-4 minutes until softened.
  3. Add the chopped tomato and cook for an additional 3 minutes, allowing it to break down slightly.
  4. Mix in the drained chickpeas, paprika, saffron (if using), salt, and pepper, stirring well to combine.
  5. Add the rice and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
  6. Allow the rice to simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  7. Once cooked, remove from heat and let it sit, covered, for 5 minutes to steam.
  8. Fluff the rice with a fork, taste, and adjust seasoning if necessary. Serve garnished with fresh parsley.
