  • Garlic, minced - 2 cloves
  • Red bell pepper, diced - 1/2
  • Green peas, frozen - 100 grams
  • Saffron threads - 1/2 teaspoon
  • Vegetable broth - 400 milliliters
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon wedges - for serving

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of hot water for about 5 minutes to release their color and flavor.
  2. In a large skillet or paella pan, heat the olive oil over medium heat. Add the onion and cook until translucent, about 3 minutes.
  3. Add the garlic and red bell pepper to the skillet, and sauté for another 2-3 minutes until the pepper softens.
  4. Stir in the basmati rice, paprika, salt, and black pepper, cooking for another 2 minutes to lightly toast the rice.
  5. Pour in the vegetable broth and the saffron mixture, stirring well. Bring to a simmer, then reduce the heat to low and cover the skillet. Cook for 10 minutes.
  6. After 10 minutes, add the shrimp and green peas to the skillet, gently folding them into the rice. Cover and cook for an additional 5-7 minutes until the shrimp are pink and cooked through.
  7. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork, garnish with fresh parsley, and serve with lemon wedges.
