- Red bell pepper, diced - 1/2
- Green peas, frozen - 100 grams
- Saffron threads - 1/2 teaspoon
- Vegetable broth - 400 milliliters
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
- Lemon wedges - for serving
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of hot water for about 5 minutes to release their color and flavor.
- In a large skillet or paella pan, heat the olive oil over medium heat. Add the onion and cook until translucent, about 3 minutes.
- Add the garlic and red bell pepper to the skillet, and sauté for another 2-3 minutes until the pepper softens.
- Stir in the basmati rice, paprika, salt, and black pepper, cooking for another 2 minutes to lightly toast the rice.
- Pour in the vegetable broth and the saffron mixture, stirring well. Bring to a simmer, then reduce the heat to low and cover the skillet. Cook for 10 minutes.
- After 10 minutes, add the shrimp and green peas to the skillet, gently folding them into the rice. Cover and cook for an additional 5-7 minutes until the shrimp are pink and cooked through.
- Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork, garnish with fresh parsley, and serve with lemon wedges.
