  • Tomato (diced) - 1 medium
  • Cumin powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lime (juiced) - 1 medium

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent (about 3-4 minutes).
  2. Stir in the diced red bell pepper and tomato, cooking for another 3-4 minutes until softened.
  3. Add the basmati rice to the pan, stirring to coat the rice with the vegetables and oil.
  4. Pour in the vegetable broth, then add the cumin, smoked paprika, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover, and let simmer for about 15 minutes or until the rice is cooked and has absorbed all the liquid.
  6. In the last 5 minutes of cooking, stir in the black beans, allowing them to heat through.
  7. After cooking, remove from heat and let sit covered for an additional 5 minutes. Fluff the rice with a fork, then stir in chopped cilantro and lime juice before serving.
