Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent (about 3-4 minutes).
- Stir in the diced red bell pepper and tomato, cooking for another 3-4 minutes until softened.
- Add the basmati rice to the pan, stirring to coat the rice with the vegetables and oil.
- Pour in the vegetable broth, then add the cumin, smoked paprika, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and let simmer for about 15 minutes or until the rice is cooked and has absorbed all the liquid.
- In the last 5 minutes of cooking, stir in the black beans, allowing them to heat through.
- After cooking, remove from heat and let sit covered for an additional 5 minutes. Fluff the rice with a fork, then stir in chopped cilantro and lime juice before serving.
