  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and smoked paprika, cooking for an additional minute until fragrant.
  4. Add the Arborio rice to the pan, stirring well to coat the grains with the oil and spices.
  5. Pour in the vegetable broth and bring to a simmer. Season with salt and black pepper to taste.
  6. Cover the saucepan and let the rice cook for about 15 minutes or until most of the liquid is absorbed.
  7. Stir in the fresh spinach, cover again, and let it cook for another 5 minutes until the spinach is wilted and the rice is tender.
  8. Remove from heat and drizzle with lemon juice before serving.
