- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and smoked paprika, cooking for an additional minute until fragrant.
- Add the Arborio rice to the pan, stirring well to coat the grains with the oil and spices.
- Pour in the vegetable broth and bring to a simmer. Season with salt and black pepper to taste.
- Cover the saucepan and let the rice cook for about 15 minutes or until most of the liquid is absorbed.
- Stir in the fresh spinach, cover again, and let it cook for another 5 minutes until the spinach is wilted and the rice is tender.
- Remove from heat and drizzle with lemon juice before serving.
