Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, combine the rinsed rice, coconut milk, water, sugar, cinnamon stick, clove, and a pinch of salt.
  3. Bring the mixture to a gentle boil over medium heat, stirring occasionally.
  4. Once boiling, reduce the heat to low, cover the pot, and simmer for about 20 minutes or until the rice is tender and the liquid has been absorbed.
  5. Remove the pot from heat and stir in the vanilla extract and raisins.
